  1. 1. Put the egg whites and a pinch of salt into a large bowl.
  2. 2. Beat the mixture with a mixer until it becomes firm.
  3. 3. Add the sugar and continue beating until the egg whites are stiff.
  4. 4. Stir the lemon juice into the egg mixture.
  5. 5. Beat briefly until the mixture is shiny and forms soft peaks.
  6. 6. Mix the nuts with the flour and the vanilla paste in a separate bowl.
  7. 7. Gently fold the nut mixture into the egg whites.
  8. 8. Fill the mixture into a piping bag with a large round tip.
  9. 9. Line a baking sheet with baking paper.
  10. 10. Pipe small mounds onto the sheet with a distance of 3 cm.
  11. 11. Flatten the mounds slightly so they are about 2 cm large.
  12. 12. Place a walnut half on each mound.
  13. 13. Preheat the oven to 150 degrees Celsius.
  14. 14. Bake the cookies in the oven for about 25 minutes.
  15. 15. Take the cookies out of the oven.
  16. 16. Loosen the cookies from the sheet immediately.
  17. 17. Let the cookies cool completely on a wire rack.
