  1. 1. Place a pot with a little water on the stove and heat it slightly.
  2. 2. Place a heatproof bowl over the pot so it touches the steam but does not sit in the water.
  3. 3. Add the butter and the 300 grams of dark chocolate to the bowl.
  4. 4. Stir the mixture slowly until the butter and chocolate are completely melted.
  5. 5. Remove the bowl from the heat and let the chocolate mixture cool down briefly.
  6. 6. Add the brown sugar, applesauce, espresso, and vanilla powder to the cooled chocolate.
  7. 7. Stir all ingredients well until they are combined.
  8. 8. Crack one egg and add it to the chocolate mixture.
  9. 9. Stir the egg in completely before adding the next egg.
  10. 10. Repeat this step with the second egg.
  11. 11. Take a separate bowl and add the spelt flour.
  12. 12. Add the almond flour, cocoa powder, and a pinch of salt to the flour mixture.
  13. 13. Mix the dry ingredients with a spoon until they are evenly distributed.
  14. 14. Take the walnuts and coarsely chop them with a knife.
  15. 15. Set aside about 40 grams of the chopped walnuts for later.
  16. 16. Chop the remaining chocolate into small pieces.
  17. 17. Add the remaining walnuts and the chopped chocolate to the chocolate batter.
  18. 18. Add the flour mixture to the bowl as well.
  19. 19. Stir everything gently until no dry spots are visible anymore.
  20. 20. Preheat the oven to 180 degrees conventional heat (or 160 degrees with fan).
  21. 21. Line a baking pan with parchment paper.
  22. 22. Pour the brownie mixture into the prepared pan.
  23. 23. Smooth the surface of the mixture with a spoon.
  24. 24. Sprinkle the reserved 40 grams of walnuts evenly over the surface.
  25. 25. Place the pan in the preheated oven.
  26. 26. Bake the brownies for about 40 minutes.
  27. 27. Remove the pan from the oven and let the brownies cool down completely.
  28. 28. Cut the cooled brownies into 20 equal pieces.
  29. 29. Serve the brownies as you like.
