🍰 Crunchy Brownies with Walnut and Espresso Flavor

Ingredients
- 120 g Butter
- 400 g Dark chocolate (min. 70% cocoa content)
- 80 g Whole cane sugar
- 120 g Apple puree or apple sauce
- 40 ml Espresso
- 0.5 tsp Vanilla powder
- 3 Eggs
- 150 g Spelt flour Type 1050
- 30 g Almond flour (2 tbsp)
- 2 tbsp strongly defatted cocoa powder (14 g)
- 1 pinch coarse sea salt
- 120 g Walnut kernels
Instructions
- 1. Place a pot with a little water on the stove and heat it slightly.
- 2. Place a heatproof bowl over the pot so it touches the steam but does not sit in the water.
- 3. Add the butter and the 300 grams of dark chocolate to the bowl.
- 4. Stir the mixture slowly until the butter and chocolate are completely melted.
- 5. Remove the bowl from the heat and let the chocolate mixture cool down briefly.
- 6. Add the brown sugar, applesauce, espresso, and vanilla powder to the cooled chocolate.
- 7. Stir all ingredients well until they are combined.
- 8. Crack one egg and add it to the chocolate mixture.
- 9. Stir the egg in completely before adding the next egg.
- 10. Repeat this step with the second egg.
- 11. Take a separate bowl and add the spelt flour.
- 12. Add the almond flour, cocoa powder, and a pinch of salt to the flour mixture.
- 13. Mix the dry ingredients with a spoon until they are evenly distributed.
- 14. Take the walnuts and coarsely chop them with a knife.
- 15. Set aside about 40 grams of the chopped walnuts for later.
- 16. Chop the remaining chocolate into small pieces.
- 17. Add the remaining walnuts and the chopped chocolate to the chocolate batter.
- 18. Add the flour mixture to the bowl as well.
- 19. Stir everything gently until no dry spots are visible anymore.
- 20. Preheat the oven to 180 degrees conventional heat (or 160 degrees with fan).
- 21. Line a baking pan with parchment paper.
- 22. Pour the brownie mixture into the prepared pan.
- 23. Smooth the surface of the mixture with a spoon.
- 24. Sprinkle the reserved 40 grams of walnuts evenly over the surface.
- 25. Place the pan in the preheated oven.
- 26. Bake the brownies for about 40 minutes.
- 27. Remove the pan from the oven and let the brownies cool down completely.
- 28. Cut the cooled brownies into 20 equal pieces.
- 29. Serve the brownies as you like.
