🍽️ Creamy Forest Mushroom Soup

Ingredients
- 500 g fresh wild mushrooms (cleaned and divided if necessary)
- 1 shallot
- 2 tbsp butter (30 g each)
- 1 tbsp flour
- 750 ml chicken broth
- 250 g sour cream
- salt
- pepper
- 1 tbsp lemon juice
- 2 tbsp parsley
Instructions
- 1. Peel the shallot and cut it into fine cubes.
- 2. Clean the forest mushrooms and cut them into bite-sized pieces.
- 3. Heat butter in a pan and sauté the shallot until translucent.
- 4. Add the mushrooms to the pan and fry them over high heat, stirring constantly, for about 2 minutes.
- 5. Dust the mushrooms with flour and stir well to combine.
- 6. Cook the mixture for another 2 to 3 minutes, stirring occasionally.
- 7. Deglaze the mushrooms with chicken broth.
- 8. Let the soup simmer on low heat for 10 minutes.
- 9. Lightly whisk the cream in a separate bowl.
- 10. Stir the cream into the soup.
- 11. Let the soup come to a brief boil.
- 12. Season the soup with salt, pepper, and lemon juice to taste.
- 13. Serve the soup in bowls.
- 14. Garnish the finished soup with fresh parsley.
