🍽️ Creamy Waldorf Salad with Walnuts

Ingredients
- 1 egg yolk
- 3 tbsp lemon juice
- 125 ml sunflower oil
- 4 tbsp whipping cream
- salt
- pepper (from the mill)
- 3 stalks celery
- 50 g walnut kernels
- 3 Boskop apples
Instructions
- 1. Put the egg yolk and one tablespoon of lemon juice into a mixing bowl.
- 2. Whisk the mixture vigorously with a spoon or whisk.
- 3. Add the oil drop by drop at first, then in a thin stream.
- 4. Keep stirring until a thick and creamy mayonnaise has formed.
- 5. Stir the cream into the mayonnaise.
- 6. Season the mayonnaise with salt and pepper to taste.
- 7. Wash and clean the celery.
- 8. Set aside a few green leaves for decoration.
- 9. Slice the celery into thin, diagonal slices.
- 10. Chop the walnut kernels coarsely.
- 11. Wash the apples and cut them into quarters.
- 12. Remove the core from the apple quarters.
- 13. Cut the apples into pieces about two to three centimeters in size.
- 14. Drizzle the apple pieces immediately with the remaining lemon juice.
- 15. Mix the celery, apples, and walnuts with the mayonnaise.
- 16. Taste the salad again and season vigorously with salt and pepper.
- 17. Garnish the finished salad with the reserved celery leaves.
- 18. Serve the salad immediately.
