  1. 1. Put the egg yolk and one tablespoon of lemon juice into a mixing bowl.
  2. 2. Whisk the mixture vigorously with a spoon or whisk.
  3. 3. Add the oil drop by drop at first, then in a thin stream.
  4. 4. Keep stirring until a thick and creamy mayonnaise has formed.
  5. 5. Stir the cream into the mayonnaise.
  6. 6. Season the mayonnaise with salt and pepper to taste.
  7. 7. Wash and clean the celery.
  8. 8. Set aside a few green leaves for decoration.
  9. 9. Slice the celery into thin, diagonal slices.
  10. 10. Chop the walnut kernels coarsely.
  11. 11. Wash the apples and cut them into quarters.
  12. 12. Remove the core from the apple quarters.
  13. 13. Cut the apples into pieces about two to three centimeters in size.
  14. 14. Drizzle the apple pieces immediately with the remaining lemon juice.
  15. 15. Mix the celery, apples, and walnuts with the mayonnaise.
  16. 16. Taste the salad again and season vigorously with salt and pepper.
  17. 17. Garnish the finished salad with the reserved celery leaves.
  18. 18. Serve the salad immediately.
