🍳 Wild Strawberry Kiwi Jam

Ingredients
- 750 g wild strawberry
- 500 g jam sugar (2:1)
- 1 lemon (juice)
- 1 vanilla pod
- 5 kiwis
Instructions
- 1. Pick the wild strawberries and remove any damaged or unripe parts.
- 2. Wash the berries only if absolutely necessary, as they will absorb too much water and lose flavor otherwise.
- 3. Place the berries in a large bowl.
- 4. Pour the lemon juice over the fruit.
- 5. Slice the vanilla pod lengthwise and scrape out the seeds.
- 6. Add both the vanilla seeds and the empty pod to the bowl.
- 7. Sprinkle the pectin sugar over the mixture.
- 8. Gently press the fruit with a potato masher to release the juices.
- 9. Let the mixture rest for 30 minutes to allow the sugar to dissolve.
- 10. Peel the kiwis while you wait.
- 11. Slice the kiwis into thin rounds.
- 12. Add the kiwi slices to the berry mixture.
- 13. Transfer the entire fruit mixture into a large cooking pot.
- 14. Place the pot over medium heat and stir constantly.
- 15. Bring the mixture to a boil.
- 16. Let the jam bubble vigorously for 4 minutes.
- 17. Perform a gel test to check if the jam is set enough.
- 18. Remove the pot from the heat as soon as the test is successful.
- 19. Remove the vanilla pod from the hot mixture.
- 20. Rinse the jam jars with hot water.
- 21. Fill the hot jam immediately into the warm jars to the brim.
- 22. Seal the jars immediately with tight screw-top lids.
- 23. Let the jars cool down completely at room temperature.
