🍰 Forest Berry Pannacotta

Ingredients
- 3 sheets gelatin
- 250 g mixed fresh forest berries (raspberries, red currants, blackberries)
- 1 vanilla pod
- 400 g whipping cream
- 100 g sugar
- 200 g frozen forest berries
- 1 tbsp powdered sugar
- fresh woodruff (for garnish)
Instructions
- 1. Soak the gelatin in a bowl of cold water.
- 2. Thoroughly wash the fresh forest berries.
- 3. Gently pat the berries dry with kitchen paper.
- 4. Slice the vanilla pod lengthwise.
- 5. Scrape the vanilla seeds out of the pod with a knife.
- 6. Place the vanilla seeds, cream, and sugar into a saucepan.
- 7. Heat the mixture on the stove.
- 8. Simmer the mixture on low heat for 10 minutes.
- 9. Remove the saucepan from the heat.
- 10. Squeeze the soaked gelatin well to remove excess water.
- 11. Stir the gelatin into the warm cream mixture.
- 12. Divide the pannacotta mixture among individual glasses.
- 13. Set aside 50 grams of the fresh berries.
- 14. Let the remaining fresh berries sink into the pannacotta.
- 15. Place the glasses in the refrigerator for at least 2 hours.
- 16. Place the frozen berries in a saucepan.
- 17. Add the powdered sugar to the berries.
- 18. Heat the berries slowly while stirring constantly.
- 19. Bring the berries to a brief boil.
- 20. Simmer the berries for about 5 minutes.
- 21. Allow the cooked berries to cool down completely.
- 22. Layer the cooled cooked berries on top of the cold pannacotta.
- 23. Distribute the 50 grams of reserved fresh berries on top.
- 24. Garnish the dessert with sweet woodruff.
