🍰 Waffles with Pudding Cream and Berries

Ingredients
- 250 ml Milk
- 1 tbsp Sugar
- 0.5 packet Vanilla pudding powder
- 600 g mixed berries
- 3 Eggs
- 150 g Flour
- 200 ml Milk
- 1 tbsp Sugar
- 1 tbsp Oil
- 1 tbsp Rum
- Butter (for the iron)
- 150 g Whipping cream
- 100 g Pistachios
- 1 packet Vanilla sugar
- Powdered sugar
Instructions
- 1. Mix the pudding powder with a small splash of cold milk until no lumps remain.
- 2. Bring the remaining milk together with the sugar to a boil in a pot.
- 3. Stir the prepared pudding milk into the hot milk.
- 4. Let the mixture boil briefly again.
- 5. Remove the pot from the heat and let the pudding cool down while stirring occasionally.
- 6. Wash the berries thoroughly and sort them.
- 7. Gently pat the berries dry with a kitchen towel.
- 8. Separate the eggs by separating the yolk from the white.
- 9. Mix the egg yolks with flour, milk, oil, rum, and sugar to form a smooth batter.
- 10. Whip the egg whites until stiff peaks form.
- 11. Gently fold the whipped egg whites into the batter.
- 12. Preheat the waffle iron.
- 13. Place four tablespoons of batter onto the greased waffle iron.
- 14. Bake the waffles for about three minutes until golden brown.
- 15. Remove the finished waffles.
- 16. Let the waffles cool on a wire rack.
- 17. Grind the pistachios finely in a mill or with a mortar.
- 18. Whip the cream together with the vanilla sugar until stiff.
- 19. Fold the ground pistachios into the cooled pudding cream.
- 20. Fill the pudding cream into a piping bag.
- 21. Pipe the cream onto half of the cooled waffles.
- 22. Distribute the berries evenly over the cream.
- 23. Place the remaining waffles on top as a lid.
- 24. Dust the finished waffles with powdered sugar at the end.
