🍽️ Crispy Waffles with Sweet Plum Compote

Ingredients
- 5 g Ginger
- 1 Vanilla pod
- 500 g fresh plums
- 200 ml blackcurrant juice
- 2 tbsp Sugar
- 4 Eggs
- 1 pinch Salt
- 250 g Flour
- 0.5 tsp Cinnamon
- 80 ml Whipping cream
- 150 ml Buttermilk
- 3 tbsp Sugar
- 1 tsp Baking powder
- Ghee (for the waffle iron)
- 150 ml Whipping cream
Instructions
- 1. Peel the ginger and grate it finely.
- 2. Slice the vanilla pod lengthwise and scrape out the seeds.
- 3. Wash the plums, halve them, and remove the pits.
- 4. Heat the juice with an equal amount of water in a pot.
- 5. Add the sugar, grated ginger, vanilla pod, and vanilla seeds to the pot.
- 6. Bring the mixture to a boil.
- 7. Simmer the compote for about 15 minutes, stirring occasionally.
- 8. Separate the eggs for the waffles.
- 9. Whisk the egg whites with a pinch of salt until stiff peaks form.
- 10. Mix the egg yolks with the flour, cinnamon, cream, buttermilk, sugar, and baking powder.
- 11. Let the batter rest for about 20 minutes.
- 12. Gently fold the egg whites into the batter.
- 13. Place 2-3 tablespoons of batter into a preheated and buttered waffle iron.
- 14. Bake the waffles one by one until golden yellow.
- 15. Keep the finished waffles warm in the oven at 80 degrees Celsius with fan if needed.
- 16. Whip the cream until stiff.
- 17. Serve the waffles with the plum compote and whipped cream.
