  2. 2. Slice the vanilla pod lengthwise and scrape out the seeds.
  3. 3. Wash the plums, halve them, and remove the pits.
  4. 4. Heat the juice with an equal amount of water in a pot.
  5. 5. Add the sugar, grated ginger, vanilla pod, and vanilla seeds to the pot.
  6. 6. Bring the mixture to a boil.
  7. 7. Simmer the compote for about 15 minutes, stirring occasionally.
  8. 8. Separate the eggs for the waffles.
  9. 9. Whisk the egg whites with a pinch of salt until stiff peaks form.
  10. 10. Mix the egg yolks with the flour, cinnamon, cream, buttermilk, sugar, and baking powder.
  11. 11. Let the batter rest for about 20 minutes.
  12. 12. Gently fold the egg whites into the batter.
  13. 13. Place 2-3 tablespoons of batter into a preheated and buttered waffle iron.
  14. 14. Bake the waffles one by one until golden yellow.
  15. 15. Keep the finished waffles warm in the oven at 80 degrees Celsius with fan if needed.
  16. 16. Whip the cream until stiff.
  17. 17. Serve the waffles with the plum compote and whipped cream.
