🍽️ Fluffy Waffles with Warm Cherry Compote

Ingredients
- 1 jar Morello cherries
- 2 tbsp Cornstarch
- 200 g Heavy cream
- 125 g Butter
- 1 tbsp Whole cane sugar
- 1 pinch Salt
- 4 Eggs
- 250 g Whole wheat flour
- 250 ml Milk (1.5% fat)
- 2 tsp Rapeseed oil
- 2 tbsp Powdered sugar from whole cane sugar
Instructions
- 1. Put the Morello cherries and the juice into a pot.
- 2. Set aside three tablespoons of the juice.
- 3. Heat the remaining juice together with the fruit.
- 4. Stir the starch until smooth in the three tablespoons of juice.
- 5. Add the starch mixture to the hot fruit mass.
- 6. Let the mixture boil once briefly.
- 7. Keep the compote warm.
- 8. Whip the cream until stiff.
- 9. Stir butter, sugar, and salt until creamy.
- 10. Separate the eggs.
- 11. Add the egg yolks one by one to the butter mixture.
- 12. Stir until the mixture is airy and foamy.
- 13. Sift the flour.
- 14. Stir in the flour and milk alternately.
- 15. Whip the egg whites until stiff.
- 16. Gently fold the egg whites into the batter.
- 17. Preheat the waffle iron.
- 18. Brush the waffle iron with oil.
- 19. Bake 12 waffles one after another.
- 20. Bake the waffles golden brown for about 3 to 4 minutes.
- 21. Let the waffles cool on a rack.
- 22. Dust the waffles with powdered sugar.
- 23. Serve the waffles with the warm cherry compote and the cream.
