🍽️ Potato Waffles with Smoked Salmon

Ingredients
- 250 g floury potatoes
- 3 eggs
- salt
- 100 g flour
- 100 ml whipping cream
- nutmeg
- liquid butter (for the waffle iron)
- 150 g smoked salmon (in slices)
- chopped dill (for garnishing)
Instructions
- 1. Cook the potatoes, peel them, and either press them through a press or mash them thoroughly. Separate the eggs and beat the egg whites stiff with a pinch of salt.
- 2. Preheat a waffle iron. Combine the mashed potatoes with the egg yolks, flour, and cream, and season with salt and nutmeg. Gently fold in the stiffly beaten egg whites. Grease the waffle iron with a little butter and bake 8 potato waffles in portions in it.
- 3. Arrange the waffles on plates, place the smoked salmon on top, and sprinkle with chopped dill. A herb sour cream or crème fraîche goes well with this.
