🍽️ Kale Waffles with Fresh Herb Sauce

Ingredients
- 250 g kale
- salt
- 150 g soft butter
- 4 eggs
- 1 pinch salt
- 250 g flour
- 250 ml milk
- pepper (from the mill)
- nutmeg
- oil (for the waffle iron)
- 200 g sour cream
- 100 g yogurt
- 2 tbsp freshly chopped dill
- salt
- lemon juice
Instructions
- 1. Wash the kale thoroughly and remove the tough stems.
- 2. Boil the kale in salted water for about 5 minutes until tender.
- 3. Shock the kale immediately with cold water to stop the cooking process.
- 4. Squeeze the kale well to remove excess water.
- 5. Chop the kale very finely.
- 6. Beat the butter until it is light and fluffy.
- 7. Beat the eggs into the butter one by one.
- 8. Sprinkle in the salt and flour while stirring.
- 9. Pour in the milk and continue stirring.
- 10. Fold the finely chopped kale into the batter.
- 11. Let the batter rest and swell for about 30 minutes.
- 12. Season the batter finally with salt, pepper, and nutmeg.
- 13. Preheat the waffle iron to medium heat.
- 14. Brush the waffle iron thinly with oil.
- 15. Bake the waffles in portions until golden brown.
- 16. Beat the sour cream smooth with the yogurt.
- 17. Fold the finely chopped dill into the sauce.
- 18. Season the sauce with salt and lemon juice to taste.
- 19. Serve the sauce together with the warm waffles.
