🍰 Oat Waffle Cake with Berries

Ingredients
- 2 ripe bananas
- 3 eggs
- 240 ml unsweetened oat drink (oat milk)
- 1 tbsp rapeseed oil
- 100 g fine oat flakes
- 160 g whole wheat flour
- 4 tbsp ground almonds (15 g each)
- 1 tsp baking powder
- 600 g skyr
- 1 tbsp white almond butter (15 g each)
- 1 tsp flaxseed oil
- 0.5 tsp vanilla powder
- 4 tbsp walnuts (15 g each)
- 300 g fresh berries
Instructions
- 1. Peel the banana and place it in a bowl.
- 2. Mash the banana into a puree using a fork.
- 3. Add the eggs, oat milk, and oil.
- 4. Whisk the mixture well until it is uniform.
- 5. Stir in the oat flakes, whole wheat flour, ground almonds, and baking powder.
- 6. Continue stirring until the batter is smooth and homogeneous.
- 7. Cover the bowl and let the batter rest in the refrigerator for 5 minutes.
- 8. Preheat the waffle iron.
- 9. Stir the batter briefly before baking.
- 10. Place about 2 to 3 tablespoons of batter on the lower baking surface of the waffle iron.
- 11. Close the waffle iron.
- 12. Bake the waffle for about 4 minutes until golden brown.
- 13. Repeat the process until you have baked about 6 waffles.
- 14. Place the skyr, almond butter, flaxseed oil, and vanilla powder in a bowl.
- 15. Stir the cream until smooth and creamy.
- 16. Chop the walnuts finely.
- 17. Wash the berries thoroughly.
- 18. Pat the berries dry.
- 19. Place one waffle on a serving plate or a large platter.
- 20. Spread 2 tablespoons of the cream onto the waffle.
- 21. Distribute some berries and walnuts on top.
- 22. Place another waffle on top.
- 23. Spread it again with cream, berries, and walnuts.
- 24. Repeat the layering process until all waffles are used.
- 25. Spread the remaining cream on the top waffle.
- 26. Decorate the cake with fresh berries and walnuts.
