🍽️ Crispy Quail with Wild Rice, Celery, and Apples

Ingredients
- 4 quail (kitchen-ready)
- salt
- pepper (from the mill)
- 2 tbsp liquid honey
- 4 tbsp dark balsamic vinegar
- 300 g wild rice
- 2 red apples
- 2 stalks celery
- 30 g butter
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Wash the quails inside and out under running water.
- 3. Pat the quails completely dry with a kitchen towel.
- 4. Season the quails generously with salt and pepper.
- 5. Whisk the honey with the balsamic vinegar in a small bowl.
- 6. Coat the quails thoroughly with the honey-vinegar mixture.
- 7. Line a baking tray with baking paper.
- 8. Place the quails on the tray with the breast side facing down.
- 9. Roast the quails in the preheated oven for 25 to 30 minutes.
- 10. Turn the quails over after half the time (approx. 12-15 minutes).
- 11. Brush the quails again with the honey-vinegar mixture when turning them.
- 12. Put the wild rice in a pot with 600 milliliters of water and a pinch of salt.
- 13. Cook the wild rice according to the package instructions.
- 14. Wash the apples thoroughly under running water.
- 15. Quarter the apples and remove the core.
- 16. Cut the apple pieces into bite-sized chunks.
- 17. Wash the celery thoroughly under running water.
- 18. Remove the tough fibers and leafy tops from the celery.
- 19. Slice the celery into thin slices.
- 20. Finish roasting the quails until they are golden brown and cooked through.
- 21. Serve the quails immediately together with the rice, celery, and apples.
