🍽️ Whole Grain Cookies with Cranberries

Ingredients
- 130 g Butter
- 100 g brown sugar
- 1 Vanilla pod (pulp)
- salt
- 1 Egg
- 100 g spelt flour (or wholemeal flour)
- 1 tsp baking powder
- 30 g fine oat flakes
- 80 g chopped almond kernels
- 80 g dried cranberries
Instructions
- 1. Preheat the oven to 160°C with top and bottom heat. Line a baking sheet with baking paper.
- 2. Beat the butter with sugar, vanilla pulp, and a pinch of salt until fluffy. Stir in the egg.
- 3. Mix the flour with baking powder and add it together with the oat flakes. Then fold in the almonds and cranberries.
- 4. Take small portions of the dough, form them into balls, and flatten them on the baking sheet.
- 5. Bake the cookies for 10-12 minutes in the oven, then remove them from the sheet and let them cool on a cake rack.
