🍽️ Crispy Whole Wheat Waffles with Fresh Fruit and Maple Syrup

Ingredients
- 2 Eggs
- 30 g soft butter (room temperature; 2 tbsp)
- 20 g Sugar (1 tbsp)
- 200 g Whole Wheat Flour
- 1 tsp Baking Powder
- 100 g Yogurt (1.5% fat)
- 100 ml Milk (1.5% fat)
- 1 pinch Salt
- 1 Mango
- 22 g Berries (e.g. strawberries and blueberries)
- 1 tbsp Maple Syrup
Instructions
- 1. Separate the eggs. Carefully separate the egg whites from the yolks.
- 2. Take half of the butter and beat it with the sugar until creamy.
- 3. Stir the egg yolks into the butter mixture.
- 4. Mix the whole wheat flour with the baking powder in a separate bowl.
- 5. Add the yogurt and milk to the butter mixture.
- 6. Stir in the flour mixture until you have a smooth batter.
- 7. Beat the egg whites with a pinch of salt until stiff peaks form.
- 8. Gently fold the beaten egg whites into the waffle batter.
- 9. Preheat your waffle iron and grease it with the remaining butter.
- 10. Bake the waffles one by one until golden brown.
- 11. Keep the finished waffles warm while you bake the rest.
- 12. Peel the mango and cut the flesh into strips.
- 13. Wash the berries and let them drain well.
- 14. Halve the berries if they are very large.
- 15. Distribute the waffles onto four plates.
- 16. Top the waffles with the fresh fruit.
- 17. Drizzle everything with maple syrup and serve immediately.
