  1. 1. Put flour, eggs, water, and salt into a large bowl.
  2. 2. Mix the ingredients using the dough hooks of a hand mixer until a rough dough forms.
  3. 3. Take the dough out of the bowl and knead it briefly by hand.
  4. 4. Work the dough until it is smooth and shows a wavy structure when cut through.
  5. 5. Decide on the preparation method: Either run it through a pasta machine or roll it out by hand.
  6. 6. If using the machine, cut the dough into strips about 0.5 cm wide using the narrow ribbon noodle attachment.
  7. 7. Hang the machine-cut noodles over a rod to let them dry.
  8. 8. If working by hand, roll the dough thin on a lightly floured surface.
  9. 9. Cut the rolled-out dough into even strips using a knife.
  10. 10. Gently separate the noodle strips from each other.
  11. 11. Place the noodles on the cutting board and let them dry in the air.
