🍽️ Crunchy Whole Wheat Yeast Braid

Ingredients
- 300 g whole wheat flour
- 125 ml lukewarm water
- 20 g yeast
- 2 tsp sugar
- 2 tsp salt
- 1 tsp ground caraway
- 2 eggs
- 2 tbsp oil
- oil (to brush the dough ball)
- 1 egg yolk
- water
- 2 tbsp pumpkin seeds
- 2 tbsp poppy seeds
- 2 tbsp rolled oats
- 2 tbsp sesame seeds
- 2 tbsp caraway
- 2 tbsp coarse sea salt
- 2 tbsp sunflower seeds
Instructions
- 1. Put yeast, sugar, and water into a large bowl and stir.
- 2. Let the mixture rest for five minutes until it foams.
- 3. Sift the flour into a separate bowl.
- 4. Lightly beat the eggs in a small bowl.
- 5. Add the sifted flour and beaten eggs to the yeast mixture.
- 6. Add salt, cumin, and oil.
- 7. Knead everything into a soft and elastic dough.
- 8. If the dough is too sticky, add a little more flour.
- 9. Shape the dough into a ball.
- 10. Lightly brush the dough ball with oil so it does not dry out.
- 11. Cover the bowl and let the dough rise for one hour.
- 12. Divide the dough into three equal parts after rising.
- 13. Shape each part into a round ball.
- 14. Roll each ball into a long braid strand.
- 15. Braid the three strands together into a loaf.
- 16. Gently press the ends of the braid together so it does not unravel.
- 17. Grease a baking tray with some fat.
- 18. Preheat the oven to 200 degrees.
- 19. Place the braid on the prepared baking tray.
- 20. Whisk the egg yolk with a little water.
- 21. Bake the braid for a total of 35 minutes.
- 22. Brush the braid with the egg yolk mixture ten minutes before the end of the baking time.
- 23. Sprinkle different spices alternately on the braid.
- 24. Let the braid finish baking until it is golden brown.
