🍽️ Crunchy Whole Grain Bread with Seeds

Ingredients
- 42 g fresh yeast (1 cube)
- 800 g whole wheat flour
- 200 g whole rye flour
- 1 tbsp salt
- 3 tbsp sunflower oil
- 2 tbsp sunflower seeds
- 2 tbsp flaxseeds
- 2 tbsp sesame seeds
- 2 tbsp rolled oats
- flour (for working)
Instructions
- 1. Dissolve the yeast in 500 milliliters of lukewarm water.
- 2. Add flour and salt to a large mixing bowl.
- 3. Pour the yeast mixture and the oil into the bowl.
- 4. Knead everything with the dough hooks of the hand mixer until smooth.
- 5. If necessary, add a little more lukewarm water or flour to reach the right consistency.
- 6. Cover the bowl and let the dough rise in a warm place for approx. 45 minutes.
- 7. Knead the dough through on a floured work surface after rising.
- 8. Work the sunflower seeds, flax seeds, and sesame into the dough.
- 9. Shape the dough into an oblong loaf.
- 10. Place the loaf in a greased and oat-flake-dusted pan.
- 11. Brush the surface of the bread with lukewarm water.
- 12. Sprinkle the remaining oat flakes over the bread.
- 13. Cover the bread and let it rise again for approx. 15 minutes.
- 14. Preheat the oven to 210 degrees (top and bottom heat).
- 15. Place the bread on the middle rack in the preheated oven.
- 16. Bake the bread for approx. 60 minutes.
- 17. Check the baking time by tapping the bottom of the bread (it should sound hollow).
- 18. Remove the bread from the oven and turn it out of the pan.
- 19. Let the bread cool completely on a wire rack.
