  2. 2. Halve one onion and slice it into thin strips.
  3. 3. Finely dice the second onion.
  4. 4. Clean the mushrooms and slice them thinly.
  5. 5. Wash the parsley and pat it dry.
  6. 6. Finely chop the parsley leaves.
  7. 7. Halve the avocados and remove the pits.
  8. 8. Scoop the flesh out of the skin and place it in a bowl.
  9. 9. Mash the avocado flesh with a fork.
  10. 10. Add the finely diced onion to the avocado.
  11. 11. Add the chopped parsley to the avocado.
  12. 12. Mix all ingredients for the avocado cream well.
  13. 13. Season the cream with one teaspoon of lemon juice.
  14. 14. Season the cream with salt and pepper to taste.
  15. 15. Season the cream with a pinch of cayenne pepper.
  16. 16. Take two-thirds of the mushroom slices.
  17. 17. Gently fold the mushroom slices into the avocado cream.
  18. 18. Place two slices of whole grain bread on each plate.
  19. 19. Spread the avocado mushroom mixture onto the bread.
  20. 20. Spread the mixture flat on the bread.
  21. 21. Top the bread with the remaining mushroom slices.
  22. 22. Top the bread with the onion strips.
  23. 23. Drizzle the assembled breads with the remaining lemon juice.
  24. 24. Grind coarse pepper over the breads.
