🍽️ Crunchy Whole Grain Bread with Creamy Avocado Mushroom Mix

Ingredients
- 2 small red onions (50 g each)
- 140 g mushrooms
- 0.5 bunch flat-leaf parsley (10 g)
- 3 ripe avocados
- 1 tsp –2 tsp lemon juice
- salt
- pepper
- cayenne pepper
- 8 slices whole grain bread (50 g each)
Instructions
- 1. Peel the onions.
- 2. Halve one onion and slice it into thin strips.
- 3. Finely dice the second onion.
- 4. Clean the mushrooms and slice them thinly.
- 5. Wash the parsley and pat it dry.
- 6. Finely chop the parsley leaves.
- 7. Halve the avocados and remove the pits.
- 8. Scoop the flesh out of the skin and place it in a bowl.
- 9. Mash the avocado flesh with a fork.
- 10. Add the finely diced onion to the avocado.
- 11. Add the chopped parsley to the avocado.
- 12. Mix all ingredients for the avocado cream well.
- 13. Season the cream with one teaspoon of lemon juice.
- 14. Season the cream with salt and pepper to taste.
- 15. Season the cream with a pinch of cayenne pepper.
- 16. Take two-thirds of the mushroom slices.
- 17. Gently fold the mushroom slices into the avocado cream.
- 18. Place two slices of whole grain bread on each plate.
- 19. Spread the avocado mushroom mixture onto the bread.
- 20. Spread the mixture flat on the bread.
- 21. Top the bread with the remaining mushroom slices.
- 22. Top the bread with the onion strips.
- 23. Drizzle the assembled breads with the remaining lemon juice.
- 24. Grind coarse pepper over the breads.
