  1. 1. Dissolve the yeast in 500 milliliters of lukewarm water.
  2. 2. Add flour and salt to a large mixing bowl.
  3. 3. Pour the yeast mixture and the oil into the bowl.
  4. 4. Knead everything with the dough hooks of the hand mixer until smooth.
  5. 5. If necessary, add a little more lukewarm water or flour to achieve the right consistency.
  6. 6. Cover the bowl and let the dough rise in a warm place for 40 minutes.
  7. 7. Knead the dough on a floured surface to incorporate the sunflower seeds.
  8. 8. Shape the dough into an oblong loaf.
  9. 9. Place the loaf in a greased and oat-flake-dusted pan.
  10. 10. Brush the surface of the bread with lukewarm water.
  11. 11. Sprinkle the remaining oat flakes on top.
  12. 12. Cover the pan and let the bread rise for another 15 minutes.
  13. 13. Preheat the oven to 210 degrees Celsius for top and bottom heat.
  14. 14. Place the bread on the middle rack in the preheated oven.
  15. 15. Bake the bread for about 60 minutes.
  16. 16. Check the baking time by tapping the bottom of the bread; it should sound hollow.
  17. 17. Remove the bread from the oven and turn it out of the pan.
  18. 18. Let the bread cool completely on a wire rack.
