🍽️ Aromatic Whole Grain Bread with Herbs

Ingredients
- 500 g wheat whole wheat flour
- 1 tbsp salt
- 1 tbsp sugar
- 250 g pure drinking whey
- 0.5 cube fresh yeast (21 g)
- 4 tbsp mixed chopped herbs
- large herb leaf (e.g. sage, basil)
- flour (for working)
Instructions
- 1. Mix 50 g of flour with 100 ml of lukewarm water to make the starter.
- 2. Cover the bowl and let the starter rest at room temperature for 1.5 days.
- 3. Put the whole wheat flour, salt, and sugar into a large mixing bowl.
- 4. Warm the whey slightly until it is lukewarm.
- 5. Crumble the yeast into the warm whey and stir until dissolved.
- 6. Add the yeast-whey mixture and the matured starter to the flour in the bowl.
- 7. Knead the ingredients well until a uniform dough forms.
- 8. Cover the dough and let it rest in a warm place for 30 minutes.
- 9. Dust a work surface with some flour and knead the dough vigorously there for 10 minutes.
- 10. Punch the dough down firmly onto the work surface repeatedly while kneading.
- 11. Knead the chopped herbs carefully and evenly into the dough.
- 12. Cover the dough again and let it rise for 45 minutes.
- 13. Preheat the oven to 200 °C.
- 14. Dust a baking sheet with flour.
- 15. Place an ovenproof dish with boiling water on the bottom oven rack to create steam.
