  1. 1. Mix 50 g of flour with 100 ml of lukewarm water to make the starter.
  2. 2. Cover the bowl and let the starter rest at room temperature for 1.5 days.
  3. 3. Put the whole wheat flour, salt, and sugar into a large mixing bowl.
  4. 4. Warm the whey slightly until it is lukewarm.
  5. 5. Crumble the yeast into the warm whey and stir until dissolved.
  6. 6. Add the yeast-whey mixture and the matured starter to the flour in the bowl.
  7. 7. Knead the ingredients well until a uniform dough forms.
  8. 8. Cover the dough and let it rest in a warm place for 30 minutes.
  9. 9. Dust a work surface with some flour and knead the dough vigorously there for 10 minutes.
  10. 10. Punch the dough down firmly onto the work surface repeatedly while kneading.
  11. 11. Knead the chopped herbs carefully and evenly into the dough.
  12. 12. Cover the dough again and let it rise for 45 minutes.
  13. 13. Preheat the oven to 200 °C.
  14. 14. Dust a baking sheet with flour.
  15. 15. Place an ovenproof dish with boiling water on the bottom oven rack to create steam.
