🍰 Whole grain nut cake with grapes

Ingredients
- 125 g Quark
- 125 ml lukewarm milk
- 1 tbsp liquid honey
- 50 g Sugar
- 1 Würfel Yeast (42 g)
- 300 g Whole Wheat Flour
- 1 pinch Salt
- 6 tbsp Walnut Oil
- 50 g coarsely chopped walnut kernels
- 100 g Raisins
- 400 g Table Grapes
- Puderzucker (for dusting)
Instructions
- 1. Mix quark, milk, honey, sugar, crumbled yeast, and two tablespoons of flour in a bowl until smooth.
- 2. Cover the bowl and let the dough rise in a warm place for about 15 minutes.
- 3. Add the remaining flour, salt, and oil.
- 4. Knead everything together into a smooth dough.
- 5. Cover the dough again and let it rise for another 45 minutes.
- 6. Wash the grapes and remove them from the stems.
- 7. Halve the grapes and remove the seeds.
- 8. Knead the dough briefly again after the rising time.
- 9. Roll out the dough on a floured work surface into a rectangle of about 50 by 25 centimeters.
- 10. Distribute raisins, grapes, and walnut kernels evenly over the dough.
- 11. Roll the dough tightly from the longer side.
- 12. Place the roll in the cake pan with the seam facing up and press it down slightly.
- 13. Cover the pan and let the cake rise for another 30 minutes.
- 14. Poke the dough surface several times with a wooden stick.
- 15. Preheat the oven to 180 degrees (convection bottom).
- 16. Bake the cake for about 45 minutes until golden brown.
- 17. Remove the cake from the oven.
- 18. Let the cake cool in the pan.
- 19. Turn the cake out onto a cake rack.
- 20. Dust the cake with powdered sugar.
- 21. Enjoy the cake best when fresh.
