  1. 1. Rinse the cucumber under hot water and pat it dry.
  2. 2. Cut the cucumber in half lengthwise.
  3. 3. Scoop out the seeds from the cucumber halves using a teaspoon.
  4. 4. Grate the cucumber flesh finely using a box grater.
  5. 5. Place the grated cucumber into a clean kitchen towel.
  6. 6. Squeeze the cucumber mixture tightly so that the liquid drains into a bowl held underneath.
  7. 7. Discard the drained liquid.
  8. 8. Return the squeezed cucumber shreds to the bowl.
  9. 9. Squeeze the juice of the half lemon directly into the bowl.
  10. 10. Mix the quark and cucumber shreds thoroughly together.
  11. 11. Season the mixture with salt and pepper to taste.
  12. 12. Wash the spinach thoroughly several times in cold water.
  13. 13. Spin the washed spinach well to remove excess water.
  14. 14. Peel the shallot.
  15. 15. Finely chop the shallot.
  16. 16. Split the baguette roll in half.
  17. 17. Spread the cucumber quark generously onto one of the bread halves.
  18. 18. Place fresh spinach leaves on top of the quark.
  19. 19. Place slices of smoked salmon on top of the spinach.
  20. 20. Sprinkle the finely chopped shallots over the salmon.
  21. 21. Place the second bread half on top as a lid.
