🍳 Crunchy Whole Wheat Baguette with Salmon and Cucumber Quark

Ingredients
- 1 mini cucumber
- 0.5 small lemon
- 4 tbsp low-fat quark
- salt
- pepper
- 1 small handful of young spinach leaves
- 1 small shallot
- 1 whole wheat baguette roll (or other whole wheat roll)
- 40 g smoked salmon (sliced)
Instructions
- 1. Rinse the cucumber under hot water and pat it dry.
- 2. Cut the cucumber in half lengthwise.
- 3. Scoop out the seeds from the cucumber halves using a teaspoon.
- 4. Grate the cucumber flesh finely using a box grater.
- 5. Place the grated cucumber into a clean kitchen towel.
- 6. Squeeze the cucumber mixture tightly so that the liquid drains into a bowl held underneath.
- 7. Discard the drained liquid.
- 8. Return the squeezed cucumber shreds to the bowl.
- 9. Squeeze the juice of the half lemon directly into the bowl.
- 10. Mix the quark and cucumber shreds thoroughly together.
- 11. Season the mixture with salt and pepper to taste.
- 12. Wash the spinach thoroughly several times in cold water.
- 13. Spin the washed spinach well to remove excess water.
- 14. Peel the shallot.
- 15. Finely chop the shallot.
- 16. Split the baguette roll in half.
- 17. Spread the cucumber quark generously onto one of the bread halves.
- 18. Place fresh spinach leaves on top of the quark.
- 19. Place slices of smoked salmon on top of the spinach.
- 20. Sprinkle the finely chopped shallots over the salmon.
- 21. Place the second bread half on top as a lid.
