  1. 1. Soak the rice paper sheets in a shallow bowl or a large pan with warm water for about one minute.
  2. 2. Place the moistened sheets in pairs on top of each other and lay them side by side on a damp kitchen towel.
  3. 3. Put the glass noodles in a bowl and pour boiling water over them.
  4. 4. Let the noodles soak according to the package instructions.
  5. 5. Slice the chicken into slices first, and then cut them into very thin strips.
  6. 6. Peel the carrot and remove the ends.
  7. 7. Wash the cucumber and cut it in half lengthwise.
  8. 8. Remove the inside of the cucumber halves with a spoon.
  9. 9. Cut the carrot and cucumber into very thin sticks (julienne).
  10. 10. Wash the lettuce leaves and dry them in a salad spinner.
  11. 11. Remove the hard middle ribs from the lettuce leaves.
  12. 12. Cut the lettuce leaves into finger-width strips.
  13. 13. Wash the coriander and shake it dry.
  14. 14. Pluck the coriander leaves from the stems.
  15. 15. Drain the glass noodles in a sieve.
  16. 16. Cut the glass noodles into shorter pieces using scissors.
  17. 17. Put the noodles, meat, carrot, cucumber, coriander, and sesame oil into a bowl.
  18. 18. Mix all the ingredients in the bowl well together.
  19. 19. Place one-eighth of the lettuce strips in the center of each rice paper pair.
  20. 20. Place one-eighth of the noodle-meat mixture on the lower center of the paper.
  21. 21. Fold the side edges of the rice paper in slightly over the filling.
  22. 22. Roll the rolls carefully but firmly from bottom to top.
  23. 23. Cut the rolls diagonally in half lengthwise for serving.
  24. 24. Serve soy sauce or hoisin sauce mixed with a little water on the side as desired.
