🍽️ Cheese-Spinach Dumplings in Butter Sauce

Ingredients
- 200 g spinach (frozen)
- 800 ml milk
- 350 g coarse semolina
- 1 onion
- 2 garlic cloves
- 1 tbsp butter
- 30 g ricotta
- 50 g gorgonzola
- 30 g alpine cheese
- 4 eggs
- salt
- pepper (from the mill)
- 1 pinch freshly ground nutmeg
- breadcrumbs (as needed)
- 100 g butter
- 50 g freshly grated parmesan
Instructions
- 1. Let the spinach thaw.
- 2. Place the spinach in a sieve and let the water drain off.
- 3. Bring the milk to a boil in a pot.
- 4. Sprinkle the semolina into the boiling milk.
- 5. Let the mixture come to a boil again briefly.
- 6. Remove the pot from the heat.
- 7. Let the semolina porridge swell for 15 minutes.
- 8. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 9. Grease a baking dish with some fat.
- 10. Peel the onion.
- 11. Peel the garlic.
- 12. Finely chop the onion.
- 13. Finely chop the garlic.
- 14. Heat the butter in a pan.
- 15. Add the onions and garlic to the hot butter.
- 16. Sauté the vegetables until translucent.
- 17. Take the ricotta.
- 18. Take the Gorgonzola.
- 19. Mix the ricotta and Gorgonzola together.
- 20. Grate the Alpine cheese finely.
- 21. Finely chop the drained spinach.
- 22. Add the cooled semolina to the pan.
- 23. Add the chopped spinach.
- 24. Add the cheese mixture.
- 25. Add the eggs.
- 26. Mix all ingredients well.
- 27. Season the mixture with salt.
- 28. Season the mixture with pepper.
- 29. Season the mixture with nutmeg.
- 30. Check if the mixture is too wet.
- 31. If the mixture is too wet, stir in breadcrumbs as needed.
- 32. Dip two tablespoons into water.
- 33. Scoop dumplings from the mixture.
- 34. Place the dumplings in the greased baking dish.
- 35. Cut the butter into small cubes.
- 36. Top the dumplings with the butter cubes.
- 37. Close the oven door.
- 38. Bake the dumplings for 25 minutes in the preheated oven.
- 39. Remove the lid 10 minutes before the end of the baking time.
- 40. Take the finished dumplings out of the oven.
- 41. Place the dumplings on hot plates.
- 42. Pour melted butter over the dumplings.
- 43. Sprinkle the grated Parmesan over them.
- 44. Serve the dish.
