🍰 Fruit Ice Pops

Ingredients
- 400 g fruit of your choice (washed, peeled if necessary, pitted and cut into small pieces)
- 100 g sugar
- 1 lime (juice and grated zest)
- 1 whole fresh egg white
Instructions
- 1. Puree the fruit flesh in the blender until completely smooth.
- 2. Press the mixture through a fine sieve if you want to remove any small pieces.
- 3. Mix the sugar with 4 tablespoons of water in a pot.
- 4. Boil the syrup briefly until the sugar has dissolved.
- 5. Let the syrup cool down completely.
- 6. Add the cooled puree, the lime juice, and the lime zest to the syrup.
- 7. Whip the egg whites until they form stiff peaks.
- 8. Gently fold the egg whites into the fruit mixture.
- 9. Pour the mixture into a shallow metal container.
- 10. Place the container in the freezer.
- 11. Stir the mixture occasionally to prevent large ice crystals from forming.
- 12. Pour the semi-frozen mixture into ice pop molds or cups.
- 13. Insert the wooden sticks into the molds.
- 14. Let the ice freeze completely for 2 to 3 hours.
- 15. Alternatively, you can pour the mixture into small ice cube trays.
- 16. Let these molds freeze for 2 to 3 hours as well.
