Ingredients
- 800 g firm-cooking potatoes
- 500 ml sunflower oil (for frying)
- granulated salt (for sprinkling)
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Choose one of the four preparation methods and cut the potatoes accordingly.
- 3. Slice the potatoes for Pommes Pailles (potato straw) into paper-thin slices.
- 4. Cut these thin slices into very fine sticks.
- 5. Rinse the potato sticks in a sieve under cold water to remove the starch.
- 6. Dry the sticks completely on a kitchen towel.
- 7. Heat oil in a pan.
- 8. Fry the potato sticks in batches until golden yellow.
- 9. Remove the fries with a slotted spoon and let them drain on kitchen paper.
- 10. Season the Pommes Pailles with salt and serve.
- 11. Cut the potatoes for Pommes Bataille (classic fries) into 0.6 cm wide slices.
- 12. Cut the slices into 0.6 cm wide sticks.
- 13. Rinse the fries under running water.
- 14. Dry the sticks on a kitchen towel.
- 15. Fry the fries in hot frying oil until golden yellow.
- 16. Season the Pommes Bataille with salt and serve.
- 17. Cut the potatoes for Pommes Rissolées into 1 cm cubes.
- 18. Rinse the potato cubes under cold water.
- 19. Dry the cubes.
- 20. Fry the potato cubes in a hot pan with oil until golden yellow.
- 21. Season the Pommes Rissolées with salt and serve.
- 22. Cut the potatoes for Pommes Pont Neuf into 1 cm wide slices.
- 23. Cut the slices into 1 cm wide sticks.
- 24. Rinse the fries under cold water.
- 25. Dry the sticks.
- 26. Fry the Pommes Pont Neuf in hot frying oil until golden yellow.
- 27. Remove the fries and let them drain.
- 28. Season the Pommes Pont Neuf with salt and serve.
