🍽️ Three Delicious Fish Spreads

Ingredients
- 250 g crab meat (from the can or jar)
- 1 small onion
- juice of one lemon
- 1 tbsp chopped parsley
- 2 tbsp olive oil (extra virgin)
- salt

- 5 smoked trout fillets
- 2 boiled starchy potatoes
- 1 tbsp grated horseradish
- 1 tbsp chopped parsley

- 400 g ready-to-cook shrimp
- 1 tbsp butter
- 2 garlic cloves
- 125 ml white wine
- 1 tsp crème fraîche
- salt
- pepper
Instructions
- 1. Set aside a bowl for the crab spread mixture.
- 2. Let the crab meat drain well in a sieve.
- 3. Finely chop the crab meat with a large knife.
- 4. Peel the onion and chop it very finely as well.
- 5. Mix the chopped crab meat with olive oil, lemon juice, the onion, salt, and pepper in the bowl.
- 6. Let the crab mixture marinate for 15 minutes until you are ready to serve.
- 7. Set aside a second bowl for the trout spread mixture.
- 8. Break the trout fillets into small pieces by hand.
- 9. Peel the potatoes and cut them into coarse chunks.
- 10. Add the potato chunks and the fish to the bowl.
- 11. Mash the mixture with a fork until a coarse paste forms.
- 12. Stir the horseradish and oil into the fish-potato paste.
- 13. Season the paste to taste with salt and pepper.
- 14. Stir in the parsley just before serving.
- 15. Set aside a third bowl for the shrimp mixture.
- 16. Peel the garlic and chop it finely.
- 17. Melt the butter in a pan.
- 18. Sauté the shrimp and garlic briefly in the hot butter.
- 19. Deglaze the pan with white wine.
- 20. Simmer the mixture over medium heat for 2 minutes until the liquid has reduced slightly.
- 21. Remove the pan from the heat.
- 22. Stir the crème fraîche into the warm shrimp mixture.
- 23. Season the shrimp with salt and pepper.
- 24. Serve the shrimp garnished with fresh basil.
