  1. 1. Set aside a bowl for the crab spread mixture.
  2. 2. Let the crab meat drain well in a sieve.
  3. 3. Finely chop the crab meat with a large knife.
  4. 4. Peel the onion and chop it very finely as well.
  5. 5. Mix the chopped crab meat with olive oil, lemon juice, the onion, salt, and pepper in the bowl.
  6. 6. Let the crab mixture marinate for 15 minutes until you are ready to serve.
  7. 7. Set aside a second bowl for the trout spread mixture.
  8. 8. Break the trout fillets into small pieces by hand.
  9. 9. Peel the potatoes and cut them into coarse chunks.
  10. 10. Add the potato chunks and the fish to the bowl.
  11. 11. Mash the mixture with a fork until a coarse paste forms.
  12. 12. Stir the horseradish and oil into the fish-potato paste.
  13. 13. Season the paste to taste with salt and pepper.
  14. 14. Stir in the parsley just before serving.
  15. 15. Set aside a third bowl for the shrimp mixture.
  16. 16. Peel the garlic and chop it finely.
  17. 17. Melt the butter in a pan.
  18. 18. Sauté the shrimp and garlic briefly in the hot butter.
  19. 19. Deglaze the pan with white wine.
  20. 20. Simmer the mixture over medium heat for 2 minutes until the liquid has reduced slightly.
  21. 21. Remove the pan from the heat.
  22. 22. Stir the crème fraîche into the warm shrimp mixture.
  23. 23. Season the shrimp with salt and pepper.
  24. 24. Serve the shrimp garnished with fresh basil.
