🍽️ Vegetarian Burgers with Bean Patties

Ingredients
- 400 g Kidney beans (can)
- 120 g breadcrumbs
- 1 red onion
- 1 pinch ground cumin
- salt
- pepper
- chili powder
- 1 tomato
- 0.5 iceberg lettuce
- 5 tbsp vegetable oil
- 4 rolls
- 4 eggs
Instructions
- 1. Rinse the beans in a sieve under running water and let them drain well.
- 2. Place the beans in batches into a kitchen appliance with a blade (e.g., food processor or blender).
- 3. Pulse the beans together with the breadcrumbs and a little lukewarm water (up to 75 milliliters) until finely chopped.
- 4. Transfer the bean mixture into a bowl.
- 5. Peel the onion and chop it finely.
- 6. Add the chopped onion, cumin, salt, pepper, and chili to the bean mixture.
- 7. Mix all ingredients thoroughly.
- 8. Let the mixture rest covered for about 30 minutes.
- 9. Wash the tomato under running water.
- 10. Remove the stem area of the tomato.
- 11. Slice the tomato into four equal slices.
- 12. Wash the salad greens under running water.
- 13. Dry the salad, for example in a salad spinner.
- 14. Cut the dry salad into strips.
- 15. Preheat the oven to the grill function.
- 16. Check if the bean mixture is easy to shape.
- 17. If necessary, add a little more water or breadcrumbs to optimize the consistency.
- 18. Wet your hands with water.
- 19. Shape four round burger patties from the mixture.
- 20. Heat 3 to 4 tablespoons of oil in a frying pan.
- 21. Fry the patties in the hot oil until brown on both sides.
- 22. Fry each side for 3 to 4 minutes.
- 23. Halve the burger buns.
- 24. Place the bun halves with the cut side facing up under the grill.
- 25. Toast the buns briefly.
- 26. Heat the remaining oil in a separate frying pan.
- 27. Fry four sunny-side-up eggs in the pan.
- 28. Lightly salt the eggs while frying.
- 29. Take a burger bun and place the salad on it.
- 30. Place the tomato slices on the salad.
- 31. Place a fried bean patty on the tomatoes.
- 32. Place a sunny-side-up egg on the patty.
- 33. Assemble the burger.
- 34. Serve the burgers immediately while warm.
