  1. 1. Cook the pasta in boiling, salted water according to the instructions on the package for 9 to 11 minutes al dente, then drain in a sieve.
  2. 2. Meanwhile, peel and finely chop the onion and garlic. Trim, rinse, and dice the bell pepper, zucchini, and carrot. Slice the vegetarian sausages.
  3. 3. Heat the olive oil in a pan. Brown the vegetarian sausages in it over medium heat for about 3 to 4 minutes until golden brown, then remove. Add the prepared vegetables to the pan and sweat them over medium heat for about 5 minutes.
  4. 4. Add the chopped tomatoes, vegetable broth, paprika powder, herbs, as well as salt and pepper to the vegetables, and simmer everything over low heat for 10 minutes.
  5. 5. Meanwhile, wash the basil, shake off excess water, and cut into thin strips. Add the fried sausages to the vegetable mixture and warm through for about 2 minutes.
  6. 6. Divide the pasta and vegetarian sausage goulash evenly among bowls, top each with a dollop of yogurt, and garnish with fresh basil.
