🍽️ Vegetarian Sausage Goulash

Ingredients
- 150 g Whole wheat pasta (e.g. Penne or Rigatoni)
- Salt
- 1 small onion
- 1 clove garlic
- 1 yellow bell pepper
- 1 zucchini
- 1 carrot
- 2 vegetarian sausages or other vegetarian sausages (75 g each)
- 1 tbsp olive oil
- 300 g chopped tomatoes (can)
- 100 ml vegetable broth
- 1 tsp sweet paprika powder
- 0.5 tsp smoked paprika powder
- 1 tsp dried Italian herbs

- 1 handful basil
- 2 tbsp yogurt (3.5% fat) (or a vegan alternative)
Instructions
- 1. Cook the pasta in boiling, salted water according to the instructions on the package for 9 to 11 minutes al dente, then drain in a sieve.
- 2. Meanwhile, peel and finely chop the onion and garlic. Trim, rinse, and dice the bell pepper, zucchini, and carrot. Slice the vegetarian sausages.
- 3. Heat the olive oil in a pan. Brown the vegetarian sausages in it over medium heat for about 3 to 4 minutes until golden brown, then remove. Add the prepared vegetables to the pan and sweat them over medium heat for about 5 minutes.
- 4. Add the chopped tomatoes, vegetable broth, paprika powder, herbs, as well as salt and pepper to the vegetables, and simmer everything over low heat for 10 minutes.
- 5. Meanwhile, wash the basil, shake off excess water, and cut into thin strips. Add the fried sausages to the vegetable mixture and warm through for about 2 minutes.
- 6. Divide the pasta and vegetarian sausage goulash evenly among bowls, top each with a dollop of yogurt, and garnish with fresh basil.
