🍽️ Vegetarian Nasi Goreng Style Rice Bowl

Ingredients
- 125 g whole grain long-grain rice
- salt
- 200 g carrots (2 carrots)
- 200 g red bell peppers (1 red bell pepper)
- 250 g zucchini (1 zucchini)
- 250 g leek (1 stalk)
- 100 g small onions (2 small onions)
- 2 garlic cloves
- 40 g ginger (1 piece)
- 25 g roasted peanuts
- 2 eggs
- 2 tbsp soy sauce
- 3 tbsp oil
- 2 tsp sambal oelek
- 75 g peas (frozen)

Instructions
- 1. Put the rice, 250 milliliters of water, and a pinch of salt into a pot.
- 2. Bring the mixture to a boil over medium heat.
- 3. Stir the rice once.
- 4. Reduce the heat to the lowest setting.
- 5. Let the rice cook for about 15 minutes in the open pot.
- 6. Wash the carrots and peel them.
- 7. Slice the carrots into rounds.
- 8. Quarter the bell pepper.
- 9. Remove the core from the bell pepper.
- 10. Rinse the cored bell pepper.
- 11. Cut the bell pepper into thin strips.
- 12. Wash the zucchini and pat it dry.
- 13. Halve the zucchini lengthwise.
- 14. Slice the zucchini into thin rounds.
- 15. Clean the leek and wash it.
- 16. Slice the leek into thin rings.
- 17. Peel the onions.
- 18. Slice the onions into strips.
- 19. Peel the garlic.
- 20. Finely chop the garlic.
- 21. Peel the ginger.
- 22. Slice the ginger into strips.
- 23. Place a clean kitchen towel over the pot with the rice.
- 24. Place the lid on the pot.
- 25. Keep the heat on the lowest possible setting.
- 26. Let the rice finish cooking for 10 to 12 minutes.
- 27. Coarsely chop the peanuts with a large knife.
- 28. Whisk the eggs in a small bowl.
- 29. Add soy sauce and 2 tablespoons of water to the egg mixture.
- 30. Heat 1 tablespoon of oil in a wok or a frying pan.
- 31. Fry the egg mixture as scrambled eggs.
- 32. Remove the scrambled eggs from the pan.
- 33. Place the scrambled eggs on a plate and set aside.
- 34. Remove the pot from the stove.
- 35. Let the rice steam for another 7 minutes with the lid on.
- 36. Fluff the rice with a fork.
- 37. Heat the remaining oil in the wok or frying pan.
- 38. Fry the onions, carrots, bell pepper, zucchini, and leek for 2 to 3 minutes, stirring constantly.
- 39. Add the garlic and ginger.
- 40. Fry the vegetables for another 2 minutes.
- 41. Remove the vegetables from the pan.
- 42. Add the vegetables to the plate with the scrambled eggs.
- 43. Fry the rice in the wok or frying pan over very high heat until crispy.
- 44. Stir in the Sambal Oelek and peas.
- 45. Fold in the cooked vegetables and scrambled eggs.
- 46. Heat everything through thoroughly.
- 47. Season with salt and pepper.
- 48. Sprinkle the dish with the chopped peanuts.
- 49. Serve the Nasi Goreng.
