🍽️ Crispy Onion Pie with Yeast Dough

Ingredients
- 0.25 cube yeast
- 1 tsp honey
- 200 g wheat flour Type 1050
- 60 g room temperature butter
- salt
- 800 g onions
- 2 tbsp olive oil
- 2 eggs
- 400 g sour cream (10% fat)
- pepper
- 1 tsp ground caraway
- 2 spring onions
Instructions
- 1. Dissolve the yeast and honey in 150 milliliters of lukewarm water.
- 2. Let the yeast mixture rest for five minutes.
- 3. Put the flour into a large bowl.
- 4. Make a well in the center of the flour.
- 5. Pour the yeast liquid into the well.
- 6. Cover the bowl with a kitchen towel.
- 7. Let the dough rise for about 15 minutes.
- 8. Add the butter and salt to the dough.
- 9. Knead everything into a smooth dough.
- 10. Cover the dough again.
- 11. Let the dough rise for about 60 minutes.
- 12. Peel the onions meanwhile.
- 13. Halve the onions.
- 14. Cut the onions into thin strips.
- 15. Heat the oil in a pan.
- 16. Sauté the onions over medium heat for 10 minutes.
- 17. Let the onions cool down a bit.
- 18. Mix the onions with the eggs.
- 19. Stir in the sour cream.
- 20. Season the mixture with salt, pepper, and cumin.
- 21. Knead the dough once more briefly.
- 22. Roll out the dough to the size of an empty baking sheet.
- 23. Line a baking sheet with baking paper.
- 24. Place the dough on the baking sheet.
- 25. Pull up a crust edge from the dough.
- 26. Spread the onion mixture over the dough.
- 27. Preheat the oven to 180 degrees (convection 160 degrees or gas level 2 to 3).
- 28. Bake the pie in the oven for about 40 minutes.
- 29. Clean the spring onions meanwhile.
- 30. Wash the spring onions.
- 31. Cut the spring onions into thin rings.
- 32. Take the pie out of the oven.
- 33. Sprinkle the spring onions over the pie.
- 34. Cut the pie into pieces.
- 35. Serve the onion pie.
