🍽️ Vegetable Burger with Marinated Zucchini Topping

Ingredients
- 200 g Carrots
- 1 large Onion
- 4 sprigs Oregano
- 200 g Seitan
- 2 Eggs
- 2 tbsp Breadcrumbs
- 1 tsp Paprika powder (sweet)
- Salt
- Pepper (from the mill)
- 5 tbsp Vegetable oil
- 4 Lettuce leaves (e.g. Lollo rosso)
- 4 Burger buns
- 1 piece Zucchini
- 1 piece Ginger (approx. 20g)
- 2 pieces Onions
- 1 tbsp Pepper berries
- 1 tbsp Vinegar
- 1 tsp Sugar
- 1 pinch Curry powder
- Salt
Instructions
- 1. Wash the zucchini and remove the hard ends. Grate the zucchini coarsely.
- 2. Peel the onions and the ginger. Chop both ingredients very finely.
- 3. Coarsely crush the peppercorns in a mortar.
- 4. Heat the oil in a pot.
- 5. Sauté the chopped onions and ginger for 3 to 4 minutes.
- 6. Add the grated zucchini, vinegar, salt, curry, and sugar to the pot.
- 7. Mix all ingredients well together.
- 8. Let the mixture simmer on low heat for approx. 15 minutes uncovered, until the liquid has almost completely evaporated.
- 9. Transfer the zucchini mixture into a container.
- 10. Let the mixture cool down.
- 11. Place the zucchini mixture in the refrigerator overnight to let the flavors develop.
- 12. Peel the carrots and grate them finely.
- 13. Peel the onion and dice it finely.
- 14. Rinse the oregano and shake it dry.
- 15. Pluck the oregano leaves from the stems.
- 16. Dice the seitan as finely as possible.
- 17. Add the seitan cubes, oregano, onions, carrots, eggs, breadcrumbs, paprika powder, salt, and pepper to a bowl.
- 18. Knead the ingredients in the bowl thoroughly.
- 19. If the mixture is too wet, add more breadcrumbs until it is easy to shape.
- 20. Shape four burger patties from the mixture.
- 21. Heat oil in a frying pan.
- 22. Fry the patties in the hot pan for approx. 4 minutes per side.
- 23. Wash the salad while doing this.
- 24. Shake the salad dry.
- 25. Halve the burger buns.
- 26. Place the salad on the bottom half of the buns.
- 27. Place the fried patties on the salad.
- 28. Cover the patties with 2 to 3 tablespoons of the zucchini relish.
- 29. Place the top half of the buns on top.
- 30. Serve the remaining relish on the side.
