🍽️ Vegetable Wraps with Smoked Tofu

Ingredients
- 1 red onion
- 1 red elongated Turkish bell pepper
- 2 tomatoes
- 4 sprigs cilantro
- 1 lime
- 150 g sour cream
- 1 tsp chili powder
- salt
- pepper
- 425 g black beans (can)
- 75 g Manchego (or young Pecorino)
- 125 g smoked tofu
- 1 romaine lettuce heart
- 4 wheat tortillas
- 2 tbsp oil
Instructions
- 1. Peel the onion and cut it into thin strips.
- 2. Quarter the bell pepper, remove the seeds, wash it, and cut it into thin strips.
- 3. Wash the tomatoes, quarter them, and cut out the hard stem areas in a wedge shape.
- 4. Remove the seeds from the tomatoes and cut the flesh into thin strips.
- 5. Wash the coriander, shake it dry, and pick the leaves off the stems.
- 6. Roughly chop the coriander leaves.
- 7. Squeeze the lime to extract the juice.
- 8. Mix the coriander in a bowl with the sour cream, chili powder, a splash of lime juice, salt, and pepper.
- 9. Rinse the beans under cold water and let them drain well.
- 10. Grate the cheese coarsely.
- 11. Cut the smoked tofu into sticks about 1 cm wide.
- 12. Wash the salad, dry it thoroughly, and cut it into thin strips.
- 13. Preheat the oven to 50 °C (fan 50 °C or gas mark 1).
- 14. Place the tortillas in the oven to warm them up.
- 15. Heat the oil in a heavy pan.
- 16. Sauté the onion and pepper strips over medium heat, stirring, for 5 to 6 minutes.
- 17. Add the tofu, beans, and tomato strips to the pan.
- 18. Sauté the mixture for another 3 minutes.
- 19. Season the vegetables with salt, pepper, and the remaining lime juice.
- 20. Remove the tortillas from the oven and spread 1 to 2 tablespoons of the sour cream mixture on them.
- 21. Divide the tofu-bean filling among the tortillas, using one quarter for each.
- 22. Sprinkle the grated cheese over the filling.
- 23. Place the salad strips on top of the cheese.
- 24. Fold one long side of the tortilla over the filling.
- 25. Fold the bottom short side up.
- 26. Roll the tortilla up tightly.
- 27. Serve the remaining sour cream on the side.
- 28. If needed, warm the finished wraps in the oven at 120 °C (fan 100 °C, gas mark 1) for about 5 minutes.
