  1. 1. Peel the onion and cut it into thin strips.
  2. 2. Quarter the bell pepper, remove the seeds, wash it, and cut it into thin strips.
  3. 3. Wash the tomatoes, quarter them, and cut out the hard stem areas in a wedge shape.
  4. 4. Remove the seeds from the tomatoes and cut the flesh into thin strips.
  5. 5. Wash the coriander, shake it dry, and pick the leaves off the stems.
  6. 6. Roughly chop the coriander leaves.
  7. 7. Squeeze the lime to extract the juice.
  8. 8. Mix the coriander in a bowl with the sour cream, chili powder, a splash of lime juice, salt, and pepper.
  9. 9. Rinse the beans under cold water and let them drain well.
  10. 10. Grate the cheese coarsely.
  11. 11. Cut the smoked tofu into sticks about 1 cm wide.
  12. 12. Wash the salad, dry it thoroughly, and cut it into thin strips.
  13. 13. Preheat the oven to 50 °C (fan 50 °C or gas mark 1).
  14. 14. Place the tortillas in the oven to warm them up.
  15. 15. Heat the oil in a heavy pan.
  16. 16. Sauté the onion and pepper strips over medium heat, stirring, for 5 to 6 minutes.
  17. 17. Add the tofu, beans, and tomato strips to the pan.
  18. 18. Sauté the mixture for another 3 minutes.
  19. 19. Season the vegetables with salt, pepper, and the remaining lime juice.
  20. 20. Remove the tortillas from the oven and spread 1 to 2 tablespoons of the sour cream mixture on them.
  21. 21. Divide the tofu-bean filling among the tortillas, using one quarter for each.
  22. 22. Sprinkle the grated cheese over the filling.
  23. 23. Place the salad strips on top of the cheese.
  24. 24. Fold one long side of the tortilla over the filling.
  25. 25. Fold the bottom short side up.
  26. 26. Roll the tortilla up tightly.
  27. 27. Serve the remaining sour cream on the side.
  28. 28. If needed, warm the finished wraps in the oven at 120 °C (fan 100 °C, gas mark 1) for about 5 minutes.
