  1. 1. Peel the shallots and dice them finely.
  2. 2. Rinse the apricots and cherry tomatoes under running water.
  3. 3. Remove the pits from the apricots and chop them into small pieces.
  4. 4. Cut the cherry tomatoes into quarters.
  5. 5. Remove the seeds and white pith from the bell pepper.
  6. 6. Wash the bell pepper and dice it finely as well.
  7. 7. Heat some oil in a frying pan.
  8. 8. Sauté the shallots over medium heat for one minute.
  9. 9. Add the diced bell pepper, apricot pieces, and tomato quarters to the pan.
  10. 10. Season the mixture with paprika powder, salt, cayenne pepper, cinnamon, and lime juice.
  11. 11. Let the salsa simmer on low heat for 7 to 10 minutes until slightly thickened.
  12. 12. Heat a second frying pan over low heat.
  13. 13. Place one tortilla in the pan and cook it for 2 minutes until golden brown.
  14. 14. Sprinkle cheese over the cooked side of the tortilla.
  15. 15. Add a spoonful of the salsa onto the cheese.
  16. 16. Cover the tortilla with a second tortilla.
  17. 17. Carefully flip the quesadilla in the pan.
  18. 18. Cook the other side for 2 to 3 minutes until golden brown.
  19. 19. Remove the finished quesadilla from the pan.
  20. 20. Cut the quesadilla into pieces.
  21. 21. Repeat the cooking process for the remaining tortillas until you have 4 quesadillas.
  22. 22. Keep the quesadillas warm in the oven if needed.
  23. 23. Rinse the chervil and parsley under running water.
  24. 24. Shake the herbs dry.
  25. 25. Pluck the leaves from the stems.
  26. 26. Chop the herbs roughly.
  27. 27. Add some sour cream to the quesadillas.
  28. 28. Sprinkle the chopped herbs over the top.
  29. 29. Serve the quesadillas immediately.
