🍽️ Crispy Mini Pizzas with Spinach

Ingredients
- 200 g spelt flour Type 1050 (+ 1 tbsp for working)
- 0.5 cube fresh yeast
- 90 ml lukewarm water
- 3 tbsp olive oil
- salt
- 200 ml pizza tomatoes
- 0.5 tsp Italian herbs
- 1 garlic clove (chopped)
- salt
- pepper (from the mill)
- 1 tbsp olive oil
- 80 g spinach (chopped)
- 50 g pizza cheese (grated)
- 150 g mozzarella
Instructions
- 1. Sift the flour into a large bowl.
- 2. Make a well in the center of the flour.
- 3. Crumble the yeast into some water and pour it into the well.
- 4. Lightly dust the yeast with flour.
- 5. Let the dough rise covered for about 20 minutes.
- 6. Add the remaining water, salt, and oil.
- 7. Knead everything into a smooth dough.
- 8. Let the dough rise covered in a warm place for another 30 minutes.
- 9. Knead the dough once more briefly.
- 10. Divide the dough into 12 equal pieces.
- 11. Roll the pieces out on a floured surface into small pizzas.
- 12. Place the pizzas on trays lined with baking paper.
- 13. Spread the pizzas with pizza tomatoes.
- 14. Salt and pepper the tomatoes.
- 15. Sprinkle the pizzas with garlic.
- 16. Blanch the spinach briefly in boiling water.
- 17. Let the spinach drain.
- 18. Squeeze the spinach slightly to remove excess liquid.
- 19. Slice the mozzarella.
- 20. Distribute the mozzarella and grated cheese on the pizzas.
- 21. Tear the spinach apart and place it on the pizzas.
- 22. Drizzle some oil over the pizzas.
- 23. Preheat the oven to 220°C (top and bottom heat).
- 24. Bake the pizzas in the oven for about 15 minutes.
- 25. Serve the mini pizzas hot.
