🍽️ Crispy Vegetarian Patties with Millet

Ingredients
- 1 shallot
- 1 garlic clove
- 2 tbsp olive oil (20 g each)
- 250 g millet
- 2 eggs
- 2 tbsp breadcrumbs
- 1 handful herbs (e.g. basil, chervil, thyme)
- salt
- pepper (from the mill)
- nutmeg (freshly grated)
Instructions
- 1. Peel the shallot and the garlic.
- 2. Finely dice the shallot and the garlic.
- 3. Heat some olive oil in a pan.
- 4. Sauté the shallots and garlic briefly.
- 5. Deglaze the mixture with about 500 milliliters of vegetable broth.
- 6. Rinse the millet in a sieve under running water.
- 7. Add the rinsed millet to the hot broth.
- 8. Cover the pan.
- 9. Simmer the millet on low heat for about 15 minutes.
- 10. Remove the pan from the heat.
- 11. Let the millet swell covered for another 15 to 20 minutes.
- 12. If necessary, add a little more broth.
- 13. Ensure that the millet has absorbed all the liquid.
- 14. Let the millet cool down slightly uncovered.
- 15. Add the eggs to the cooled millet.
- 16. Add the breadcrumbs.
- 17. Finely pick the fresh herbs.
- 18. Add the chopped herbs to the millet.
- 19. Mix all ingredients into a moldable mass.
- 20. Season the mixture with salt.
- 21. Season the mixture with pepper.
- 22. Season the mixture with a pinch of nutmeg.
- 23. Shape the mixture into small patties.
- 24. Heat some oil in a frying pan.
- 25. Fry the patties in batches in the pan.
- 26. Fry each side for about 2 to 3 minutes until golden brown.
- 27. Drain the finished patties on kitchen paper.
- 28. Serve the vegetarian patties hot.
