🍽️ Crispy Vegetarian Patties with Yogurt Dip

Ingredients
- 150 g whole grain cereal flakes or legumes (oats, quinoa, millet or red lentils)
- 30 g cheese (feta, parmesan, cream cheese or gouda)
- 0.5 red bell pepper (or 1 carrot)
- 10 g parsley (0.5 bunch)
- 1 egg (or 1–2 tbsp chickpea flour)
- 40 g rolled oats or breadcrumbs or almond flour (4 tbsp)
- 10 g seeds (1 tbsp; flax seeds or sesame seeds)
- 0.5 tsp turmeric powder
- salt
- pepper
- 2 tsp rapeseed oil
- 150 g yogurt (3.5 % fat)
- 100 g salad mix
Instructions
- 1. Cook the grains or legumes in double the amount of water. Follow the instructions on the package. Cook them for 15 to 20 minutes.
- 2. Remove the pan from the heat. Let the mixture cool down for 10 minutes.
- 3. Crumble the cheese or grate it finely.
- 4. Wash the bell pepper. Remove the inside with the seeds. Cut the vegetable into small cubes.
- 5. Peel the carrot. Grate it finely.
- 6. Wash the parsley. Shake it dry.
- 7. Pluck the leaves from the stems. Chop the leaves finely.
- 8. Place the cooled grain or legume mixture into a bowl.
- 9. Add one egg.
- 10. Add the grated or crumbled cheese.
- 11. Add the chopped parsley.
- 12. Add the diced bell pepper.
- 13. Add the oat flakes.
- 14. Add the seeds.
- 15. Season the mixture with turmeric.
- 16. Season the mixture with salt.
- 17. Season the mixture with pepper.
- 18. Mix all ingredients well together.
- 19. Shape the mixture into 8 flat patties.
- 20. Heat 1 teaspoon of oil in a pan.
- 21. Place 4 patties into the hot pan.
- 22. Fry the patties over medium heat.
- 23. Fry them for 3 to 4 minutes on the first side.
- 24. Turn the patties over.
- 25. Fry them for another 3 to 4 minutes on the second side.
- 26. Fry them until golden brown.
- 27. Remove the finished patties from the pan.
- 28. Repeat the process with the remaining 4 patties.
- 29. Preheat the oven.
- 30. Set the oven to 80 degrees Celsius.
- 31. If using convection, set the oven to 60 degrees Celsius.
- 32. If using gas, set the level to 1.
- 33. Keep the finished patties warm in the preheated oven.
- 34. Place the yogurt into a small bowl.
- 35. Add lemon juice to the yogurt.
- 36. Season the yogurt with salt.
- 37. Season the yogurt with pepper.
- 38. Mix the yogurt dip well.
- 39. Wash the salad mix.
- 40. Shake the salad dry.
- 41. Arrange the vegetarian patties on plates.
- 42. Serve with the yogurt dip.
- 43. Serve with the salad.
