🍳 Creamy Oat Porridge with Mango

Ingredients
- 600 ml coconut drink
- 200 g fine oat flakes
- 4 tsp maple syrup
- 400 g mango (1 mango)
- 60 g coconut chips (6 heaped tbsp)
- 4 sprigs mint (for garnish)
Instructions
- 1. Pour the coconut drink into a pot.
- 2. Heat the drink on the stove.
- 3. Stir the oats into the warm liquid.
- 4. Add the maple syrup and stir everything well.
- 5. Let the porridge simmer on medium heat for 2 to 3 minutes.
- 6. Reduce the heat to the lowest setting.
- 7. Let the porridge swell for about 5 minutes.
- 8. Peel the mango meanwhile.
- 9. Cut the mango in half to remove the pit.
- 10. Dice the mango flesh into small cubes.
- 11. Put the coconut chips into a small frying pan.
- 12. Toast the chips without extra fat on medium heat.
- 13. Toast the chips for 2 minutes.
- 14. Wash the mint under running water.
- 15. Shake the mint dry.
- 16. Pluck the mint leaves from the stems.
- 17. Fill the finished porridge into glasses or small bowls.
- 18. Distribute the mango cubes over the porridge.
- 19. Sprinkle the toasted coconut chips on top.
- 20. Garnish the dish with the fresh mint leaves.
