  1. 1. Peel the potatoes and cut them into sticks about 2 centimeters thick.
  2. 2. Wash the peppers, halve them, remove the seeds, and slice them into thin strips.
  3. 3. Peel the onion and slice it into thin rings.
  4. 4. Wash the sage leaves, shake off excess water, and slice them into thin strips.
  5. 5. Heat the oil in a large pot.
  6. 6. Sauté the onion rings in the hot oil until they become translucent.
  7. 7. Add the potatoes, pepper strips, sauerkraut, tomato paste, and sage strips to the pot.
  8. 8. Fry the vegetables for 5 minutes.
  9. 9. Deglaze the mixture with tomato juice and broth.
  10. 10. Season the goulash with salt and pepper.
  11. 11. Simmer the dish covered for 20 to 25 minutes.
  12. 12. Remove the lid and let the sauce reduce a bit more.
  13. 13. Serve the goulash hot.
