🍽️ Hearty Vegan Goulash

Ingredients
- 1 kg floury potatoes
- 3 red bell peppers
- 1 large onion
- 2 sprigs sage
- 2 tbsp neutral oil (20 ml each)
- 250 g sauerkraut
- 2 tbsp tomato paste
- 330 ml tomato juice
- 250 ml broth
- salt
- pepper (from the mill)
Instructions
- 1. Peel the potatoes and cut them into sticks about 2 centimeters thick.
- 2. Wash the peppers, halve them, remove the seeds, and slice them into thin strips.
- 3. Peel the onion and slice it into thin rings.
- 4. Wash the sage leaves, shake off excess water, and slice them into thin strips.
- 5. Heat the oil in a large pot.
- 6. Sauté the onion rings in the hot oil until they become translucent.
- 7. Add the potatoes, pepper strips, sauerkraut, tomato paste, and sage strips to the pot.
- 8. Fry the vegetables for 5 minutes.
- 9. Deglaze the mixture with tomato juice and broth.
- 10. Season the goulash with salt and pepper.
- 11. Simmer the dish covered for 20 to 25 minutes.
- 12. Remove the lid and let the sauce reduce a bit more.
- 13. Serve the goulash hot.
