🍽️ Vegan Walnut Mushroom Burgers

Ingredients
- 70 g walnuts
- 500 g mushrooms
- 2 shallots
- 1 garlic clove
- 2 tbsp olive oil
- 30 g chickpea flour (2 tbsp)
- 150 g fine oat flakes
- 1 handful parsley
- salt
- pepper
- 1 handful lamb's lettuce (or arugula)
- 1 pear
- 1 red onion
- 1 tsp maple syrup
- 1 tomato
- 3 tbsp cashew butter
- nutmeg
- 1 tbsp lemon juice
- 4 vegan burger buns (e.g. with coarse oat flakes as topping)
Instructions
- 1. Finely chop the walnuts.
- 2. Clean the mushrooms and chop them finely as well.
- 3. Peel the shallots and garlic and chop them finely.
- 4. Heat one tablespoon of olive oil in a pan.
- 5. Sauté the mushrooms, shallots, and garlic in the pan.
- 6. Remove the pan from the heat.
- 7. Stir the chopped walnuts into the vegetable mixture.
- 8. Mix chickpea flour with four tablespoons of water.
- 9. Crush the oat flakes in a stand mixer.
- 10. Wash the parsley and shake it dry.
- 11. Chop the parsley.
- 12. Add the chickpea flour mixture, oat flakes, and parsley to the mushroom mixture.
- 13. Knead all ingredients together thoroughly.
- 14. If necessary, add a little more chickpea flour.
- 15. Season the mixture with salt and pepper.
- 16. Shape four burger patties from the mixture.
- 17. Heat one tablespoon of olive oil in a pan.
- 18. Fry the burger patties brown on both sides.
- 19. Wash the salad and shake it dry.
- 20. Set the salad aside.
- 21. Wash the pear and remove the core.
- 22. Slice the pear into thin slices.
- 23. Peel the onion and slice it into rings.
- 24. Heat maple syrup in a pot.
- 25. Caramelize the pear slices and onion rings in the maple syrup.
- 26. Set the caramelized ingredients aside.
- 27. Wash the tomato and slice it.
- 28. Mix cashew cream with nutmeg and lemon juice.
- 29. Add a little water depending on the desired consistency.
- 30. Mix the sauce well.
- 31. Slice the burger buns open.
- 32. Toast the inner surfaces of the buns briefly in a hot pan without fat.
- 33. Arrange all ingredients on the bottom half of the burger bun.
- 34. Place the top half of the burger bun on top.
