🍽️ Vegan Chocolate Crêpes with Orange Sauce

Ingredients
- 100 g flour
- 25 g cocoa powder
- 125 ml soy drink (soy milk) (chocolate)
- 125 ml mineral water
- 1 tbsp sunflower oil
- 0.5 pinch salt
- 1 tsp vanilla sugar
- sunflower oil (for frying)
- 4 tbsp sugar
- 1 tbsp margarine
- 50 ml soy cream
- 150 ml orange juice
- powdered sugar (for dusting)
- orange slice (for garnish)
Instructions
- 1. Put flour, cocoa, milk, mineral water, oil, salt, and vanilla sugar into a bowl.
- 2. Whisk the ingredients with a whisk until the batter is smooth and lump-free.
- 3. Cover the bowl and let the batter rest for at least one hour.
- 4. Put the sugar in a saucepan and let it caramelize over medium heat.
- 5. Stir the margarine into the caramelized sugar.
- 6. Deglaze the mixture with cream and orange juice.
- 7. Reduce the heat and let the sauce simmer gently.
- 8. Remove the pan from the heat and let the sauce cool down.
- 9. Stir the crêpe batter again after resting.
- 10. If necessary, add a little more milk to adjust the consistency.
- 11. Lightly grease a pan with oil.
- 12. Pour a small amount of batter into the hot pan.
- 13. Cook the crêpe for about one minute.
- 14. Flip the crêpe and finish cooking it on the other side.
- 15. Repeat this process until all the batter is used.
- 16. Fold two finished crêpes together.
- 17. Place the folded crêpes on a plate.
- 18. Drizzle one or two tablespoons of the orange sauce over the crêpes.
- 19. Dust the crêpes with powdered sugar.
- 20. Garnish the dish with orange slices and serve.
