🍽️ Creamy Vegan Potato Gratin

Ingredients
- 12 potatoes
- 2 tbsp coconut oil
- 160 ml creamy coconut milk
- 320 ml vegetable broth
- 1 pinch nutmeg
- salt
- pepper
- 2 tbsp nutritional yeast
Instructions
- 1. Peel the potatoes or wash organic potatoes very thoroughly.
- 2. Slice the potatoes into thin rounds.
- 3. Heat the coconut oil in a large pan.
- 4. Fry the potato slices for a few minutes over medium heat.
- 5. Place the pre-fried potatoes into a baking dish.
- 6. Pour the coconut milk and vegetable broth over the potatoes.
- 7. Sprinkle the spices and nutritional yeast evenly over the top.
- 8. Preheat the oven to 190 °C (170 °C for fan-assisted or gas mark 2–3).
- 9. Bake the gratin in the oven for 20 to 30 minutes.
