🍽️ Hearty Vegan Vegetable Stew

Ingredients
- 1 onion
- 1 garlic clove
- 2 tbsp olive oil
- 1 l vegetable broth (instant or jar)
- 1 small kohlrabi
- 200 g green beans
- 200 g potatoes
- 200 g carrots
- 2 small leek stalks
- 150 g frozen peas
- 1 tsp marjoram
- 1 tsp savory
- salt
- pepper (from the mill)
Instructions
- 1. Peel the onions and garlic and chop them finely.
- 2. Peel the carrots, potatoes, and kohlrabi and cut them into small cubes.
- 3. Wash the leek, remove the tough ends, and slice it into rings.
- 4. Wash the beans, trim the ends, and cut them into small pieces.
- 5. Let the peas thaw.
- 6. Heat the oil in a large pot.
- 7. Sauté the onions in it until translucent.
- 8. Add the garlic, carrots, potatoes, and kohlrabi and sauté everything briefly.
- 9. Deglaze the vegetables with the broth and bring to a boil once.
- 10. Add marjoram and savory to the broth.
- 11. Let everything simmer for about 10 minutes.
- 12. Add the beans and leek and cook for another 10 minutes.
- 13. Add the peas and cook for 2 to 3 minutes until they are soft.
- 14. Season the stew with salt and pepper and adjust to taste.
