🍰 Vegan Apple Pie

Ingredients
- 330 g spelt flour Type 1050 (+ 1 tbsp for working)
- salt
- 195 g margarine
- 5 large apples (e.g. Boskop, Elstar, Jonagold)
- 125 g sugar
- 1 tsp cinnamon powder
- 1 pinch nutmeg
Instructions
- 1. Put 300 grams of flour and one teaspoon of salt into a large bowl.
- 2. Cut 175 grams of margarine into small cubes.
- 3. Add the margarine cubes to the flour.
- 4. Mix everything well until small crumbs form.
- 5. Add four to five tablespoons of cold water.
- 6. Knead the dough into a smooth, firm ball.
- 7. Divide the dough ball into two halves.
- 8. Wrap the halves and put them in the fridge for 30 minutes.
- 9. Peel the apples and cut them into quarters.
- 10. Remove the core from the apple pieces.
- 11. Slice the apple quarters into thin slices.
- 12. Mix 100 grams of sugar with the remaining flour.
- 13. Add cinnamon, nutmeg, and a pinch of salt to the sugar mixture.
- 14. Gently fold the apple slices into the spice mixture.
- 15. Dust a work surface with flour.
- 16. Roll out the first dough half slightly larger than the pie dish.
- 17. Place the dough circle into the dish.
- 18. Press the bottom and edges of the dough firmly.
- 19. Trim the excess dough edge.
- 20. Spread the apple mixture evenly over the dough base.
- 21. Cut the remaining margarine into small pieces and distribute them over the apples.
- 22. Roll out the second dough half.
- 23. Place the second dough circle over the filling.
- 24. Press the edges of the two dough halves together firmly.
- 25. Use a spoon handle to create a crimped pattern on the edge.
- 26. Cut five to six small slits into the top crust.
- 27. Sprinkle the cake with the remaining sugar.
- 28. Preheat the oven to 180 degrees (convection 160 degrees or gas mark 2–3).
- 29. Bake the cake for about 50 minutes until golden brown.
- 30. Cover the cake with baking paper if it gets too dark.
- 31. Let the cake cool completely on a wire rack.
