🍰 Vegan Cinnamon Rolls

Ingredients
- 250 g spelt flour Type 1050 (+ flour for the work surface)
- 1 pinch salt
- 0.5 cube fresh yeast (approx. 21 g)
- 130 ml lukewarm almond drink (almond milk)
- 50 g raw cane sugar
- 0.25 tsp grated lemon zest
- 50 g liquid, vegan margarine
- 40 g finely ground almond kernels
- 1 tsp cinnamon
Instructions
- 1. Mix the flour with the salt in a large bowl.
- 2. Make a well in the center of the flour mixture.
- 3. Dissolve the yeast in about 25 milliliters of lukewarm almond milk.
- 4. Pour the yeast mixture into the flour well and stir it in.
- 5. Cover the bowl and let the dough rest for about 15 minutes.
- 6. Add half of the sugar, the lemon zest, and half of the margarine to the dough.
- 7. Knead everything with the remaining almond milk to form a medium-firm dough.
- 8. Knead the dough vigorously until it is smooth and elastic.
- 9. If necessary, add a little more flour or liquid to achieve the right consistency.
- 10. Cover the dough and let it rise in a warm place for about 45 minutes.
- 11. The dough should have doubled in volume.
- 12. Knead the risen dough briefly once more.
- 13. Roll the dough into a log.
- 14. Work on a lightly floured surface and roll the dough out to a thickness of 1 to 2 centimeters.
- 15. Brush the dough surface with a little liquid margarine.
- 16. Sprinkle almonds evenly over the dough.
- 17. Mix the remaining sugar with the cinnamon.
- 18. Spread the cinnamon-sugar mixture evenly over the dough.
- 19. Roll the dough up tightly lengthwise.
- 20. Cut the roll into slices about 2 centimeters thick using a knife.
- 21. Place the slices on two baking sheets lined with baking paper, leaving some space between them.
- 22. Brush the tops of the rolls with the remaining liquid margarine.
- 23. Preheat the oven to 200 degrees (convection: 180 degrees; gas: setting 3).
- 24. Bake the rolls for about 30 minutes until golden brown.
- 25. Remove the rolls from the oven and let them cool slightly.
