🍽️ Fluffy Vegan Waffles with Strawberry Compote

Ingredients
- 1 ripe banana
- 50 ml oat drink (oat milk)
- 50 ml oat cream
- 100 g spelt whole wheat flour
- 1 tbsp cinnamon
- 1 tsp baking powder
- 1 tsp –2 tsp raw cocoa powder
- 50 ml mineral water
- 300 g fresh strawberries
- 0.5 lemon
- a little oil (for the waffle iron)
Instructions
- 1. Mash the banana thoroughly with a fork until smooth.
- 2. Pour the oat drink and oat cream alternative into the banana mixture.
- 3. Stir the liquid and banana together until well combined.
- 4. Mix all dry ingredients together in a separate bowl.
- 5. Add the dry mixture to the banana liquid.
- 6. Pour in the sparkling water.
- 7. Stir vigorously until a smooth and even batter forms.
- 8. Wash the strawberries under cold water.
- 9. Remove the green stems and leaves.
- 10. Cut the strawberries into four equal pieces.
- 11. Place the cut strawberries into a small saucepan.
- 12. Pour the lemon juice over the berries.
- 13. Add a pinch of cinnamon.
- 14. Let the mixture simmer gently until the strawberries are soft and form a compote.
- 15. Turn on the waffle iron and let it preheat.
- 16. Lightly grease the waffle iron plates with a little oil.
- 17. Pour the batter in portions into the hot waffle iron.
- 18. Bake the waffles one after another until they are golden brown and crispy.
- 19. Serve the finished waffles with the warm strawberry compote.
