🍽️ Homemade Vegan Tomato Sauce

Ingredients
- 2 kg tomatoes
- 4 garlic cloves
- 4 shallots
- 4 tbsp olive oil
- 2 sprigs rosemary
- 4 sprigs thyme
- 4 sprigs oregano
- sea salt
- 1 tsp raw cane sugar
- cayenne pepper
Instructions
- 1. Wash the tomatoes thoroughly.
- 2. Cut out the hard stem area at the top of each tomato.
- 3. Bring a pot of salted water to a boil.
- 4. Dip the tomatoes briefly into the boiling water.
- 5. Remove the tomatoes immediately and shock them under cold water to stop the cooking process.
- 6. Peel off the loosened skin pieces from the tomatoes.
- 7. Cut the peeled tomatoes into small cubes.
- 8. Peel the garlic and the shallots.
- 9. Cut the garlic and shallots into small cubes as well.
- 10. Heat some oil in a large pan.
- 11. Add the diced shallots and garlic to the hot pan.
- 12. Sauté the vegetables until they are translucent and soft.
- 13. Add the tomato cubes to the pan.
- 14. Let the sauce simmer for about one hour, stirring occasionally.
- 15. The sauce should become thick and creamy in consistency.
- 16. Wash the fresh herbs under running water.
- 17. Shake the herbs dry.
- 18. Pluck the leaves off the stems.
- 19. Finely chop the herbs.
- 20. Stir the chopped herbs into the tomato sauce.
- 21. Season the sauce with salt to taste.
- 22. Add some raw cane sugar to balance the acidity.
- 23. Sprinkle a little cayenne pepper for a mild heat.
- 24. Fill the hot sauce into clean, prepared jars.
- 25. Seal the jars tightly immediately.
- 26. Let the jars cool down completely at room temperature.
