  2. 2. Cut out the hard stem area at the top of each tomato.
  3. 3. Bring a pot of salted water to a boil.
  4. 4. Dip the tomatoes briefly into the boiling water.
  5. 5. Remove the tomatoes immediately and shock them under cold water to stop the cooking process.
  6. 6. Peel off the loosened skin pieces from the tomatoes.
  7. 7. Cut the peeled tomatoes into small cubes.
  8. 8. Peel the garlic and the shallots.
  9. 9. Cut the garlic and shallots into small cubes as well.
  10. 10. Heat some oil in a large pan.
  11. 11. Add the diced shallots and garlic to the hot pan.
  12. 12. Sauté the vegetables until they are translucent and soft.
  13. 13. Add the tomato cubes to the pan.
  14. 14. Let the sauce simmer for about one hour, stirring occasionally.
  15. 15. The sauce should become thick and creamy in consistency.
  16. 16. Wash the fresh herbs under running water.
