Ingredients
- 200 g raspberries (or mixed berries)
- 2 tbsp chia seeds
- 100 g coconut oil
- 250 g oat flour (or ground oat flakes + a little flour for the work surface)
- 80 g ground almonds
- 70 g date sugar (date sugar)
- 1 pinch vanilla powder
- 1 tsp lemon zest
- 50 ml almond drink (almond milk)
Instructions
- 1. Put the berries in a bowl.
- 2. Puree the berries until smooth.
- 3. Fold the chia seeds into the berry mixture.
- 4. Let the mixture rest for 30 minutes.
- 5. Stir the mixture occasionally during the resting time.
- 6. Melt the coconut oil in a pot.
- 7. Put the oat flour in a large bowl.
- 8. Add the almonds to the bowl.
- 9. Add the date sugar to the bowl.
- 10. Add the melted coconut oil to the bowl.
- 11. Add the vanilla to the bowl.
- 12. Add the lemon zest to the bowl.
- 13. Add the almond milk to the bowl.
- 14. Knead the ingredients into a dough.
- 15. Dust the work surface with flour.
- 16. Roll out the dough on the work surface.
- 17. Cut out round cookies from the dough.
- 18. Cut out heart shapes from the dough.
- 19. Place the cookies on a baking sheet lined with baking paper.
- 20. Preheat the oven.
- 21. Bake the cookies at 175 °C conventional heat.
- 22. Bake the cookies at 155 °C fan-forced heat.
- 23. Bake the cookies at gas mark 2 to 3.
- 24. Bake the cookies for 10 minutes.
- 25. Take the cookies out of the oven.
- 26. Let the cookies cool on a wire rack.
- 27. Put a small teaspoon of jam on one cookie.
- 28. Place another cookie without jam on top.
- 29. Gently press the cookies together.
- 30. Repeat this with all the cookies.
- 31. Use up all the jam.
