🍽️ Vegan Asparagus Pizza

Ingredients
- 21 g fresh yeast
- 400 g flour
- 4 tbsp vegetable oil
- 1 tsp salt
- flour (for working)
- olive oil (for brushing)
- 250 g green asparagus
- salt
- 4 spring onions
- 100 g tofu
- 150 ml soy cream
- 1 clove garlic
- pepper (from the mill)
- 120 g grated pizza cheese (vegan)
- 1 handful herbs (parsley and cilantro)
- 120 g green olives (pitted to taste)
Instructions
- 1. Dissolve the yeast in about 200 milliliters of lukewarm water.
- 2. Add the flour, the oil, and the salt.
- 3. Knead everything into a smooth dough until it pulls away from the bowl.
- 4. Adjust the amount of flour slightly if necessary.
- 5. Let the dough rise covered in a warm place for about 30 minutes.
- 6. Peel the bottom third of the asparagus and cut off any woody ends if necessary.
- 7. Halve the asparagus spears lengthwise and then cut them crosswise into pieces.
- 8. Blanch the asparagus in salted water for 2 to 3 minutes until it is al dente.
- 9. Shock the asparagus and let it drain well.
- 10. Wash the spring onions and slice them into thin rings.
- 11. Puree the tofu finely with the soy cream and the peeled garlic.
- 12. Season the tofu mixture with salt and pepper.
- 13. Preheat the oven to 240 degrees Celsius fan-forced.
- 14. Line two baking sheets with baking paper.
- 15. Knead the yeast dough on a floured surface.
- 16. Divide the dough into four equal pieces.
- 17. Roll each piece into a round flatbread.
- 18. Place two flatbreads on each baking sheet.
- 19. Brush the flatbreads with oil.
- 20. Spread the tofu cream over the flatbreads.
- 21. Sprinkle the cheese over the top.
- 22. Top the pizzas with the asparagus.
- 23. Sprinkle the spring onions over the top.
- 24. Bake the pizzas for 10 to 15 minutes until golden brown and crispy.
- 25. Rinse the herbs and shake them dry.
- 26. Pluck the leaves from the stems and chop them finely.
- 27. Drain the olives.
- 28. Take the pizzas out of the oven.
- 29. Top the pizzas with the olives.
- 30. Sprinkle the chopped herbs over the top.
- 31. Grind some pepper over the top and serve the pizzas.
